What it is
The Latvian label reads Aknu desa, vārīta — boiled liver sausage. It is built on a quarter pork liver, cooked and filled into a 300 g chub with a clip at each end, the way liver sausage has been sold across the Baltics for decades. Straight from the fridge it slices neatly for a plate of cold cuts; left out for a few minutes it softens and spreads across bread without tearing it.
The flavour is proper pork liver — deeper and more savoury than a chicken-liver pâté — rounded out with spice extracts rather than anything sweet. Eat it on dark rye with raw onion and a pickled cucumber, or on a fresh roll with a spoonful of cranberry or lingonberry, which is how it is usually photographed in Riga and, as it happens, how it is usually eaten.
