Dobele (AS Dobeles dzirnavnieks) is one of Latvia's leading flour mills, and this mix reflects the same milling standards that go into their plain flours. One 500 g pack is enough for a generous batch of thick, fluffy pancakes.
Empty the contents into a bowl. Add warm milk (or water), eggs, and a little melted butter or oil according to the packet instructions. Stir until smooth, cover and leave to rise in a warm spot for 30–40 minutes — the batter will grow noticeably and become airy. Fry in a lightly greased pan over medium heat until golden on both sides. Serve warm with sour cream, jam, or honey.
