What it is
Barberry ( Berberis vulgaris ) is one of the oldest spices in Eastern cooking. Small, vivid red berries are picked ripe, then gently dried to preserve their bright, sharp acidity. A pinch scattered into pilaf during the final minutes of cooking is a tradition across Uzbekistan, Azerbaijan and Georgia: the berry lifts the richness of the meat with a citrus-like tang, without overpowering the dish.
Ready to use straight from the pack. Add a teaspoon to slow-cooked lamb or beef pilaf, stir into sauces and marinades, or use to garnish grain salads and tagines. The natural sourness of barberry balances fatty and sweet ingredients with ease.
