What it is
Dried bream back is a staple of the Eastern European dried fish tradition. The dorsal cut — firm, meaty, and less fatty than the belly — is salt-cured and then slowly air-dried to concentrate the flavour. The result is a dense, satisfying chew with the clean, mild taste of freshwater bream.
