What it is
Hot-smoked pork flank from Delikatesas, one of the oldest meat-curing houses in Northern Lithuania, working since 1937. The Krivio line is their flagship range of traditionally smoked meats — made from carefully selected raw materials with only natural additives, smoked over hardwood until the surface deepens to a warm amber-mahogany.
The flank is cut from the belly area, where neat ribbons of lean meat alternate with sweet, soft fat. Salt-cured, lightly seasoned, then hot-smoked low and slow, it comes out fully cooked and ready to eat — sliceable cold for the cutting board, or warmed briefly in a pan so the edges crisp and the fat turns translucent. Serve thin on dark rye with mustard and pickled onion, fold into a kapusta stew, or dice it into scrambled eggs and a panful of potatoes.
