Rainbow trout (Oncorhynchus mykiss) is prized for its tender, pale-pink flesh and mild, slightly sweet flavour. Cold smoking — carried out at temperatures below 30°C — draws moisture away slowly, concentrating the natural oils while coating the fish in a delicate smoky aroma without cooking it. The result is a silky, firm texture with a clean finish.
Supplied whole. Slice from the backbone and serve with dark rye bread, cream cheese, capers, or thinly sliced red onion. Keep refrigerated; consume within 7 days of opening.
