What it is
Kvass concentrate — also called kvass wort concentrate (KKS) — is the base from which traditional Russian kvass is brewed at home. Produced by slow mashing and evaporating rye and barley malt along with rye flour, it captures the natural bread sugars and colour of a classic dark rye wort.
One 200 g glass jar yields approximately 4–5 litres of ready kvass. Add water, a little sugar and a pinch of active yeast, leave to ferment for 12–24 hours, then chill and serve. The result is a pleasantly fizzy, malt-forward drink that goes with everything from black bread to smoked fish.

Rye malt, barley malt, rye flour, water. May contain citric acid as a natural acidulant.
