What it is
Churchkhela is one of Georgia's most iconic confections — strings of walnuts threaded onto a cord and repeatedly dipped in tatara , a thickened grape must, then hung to dry until the coating sets firm. The result is a chewy, intensely fruity outer shell around a core of whole walnut halves. Rich in natural sugars and healthy fats, it has fuelled Georgian travellers and harvesters for centuries. This version uses dark grape juice, giving a deep, tangy sweetness with no added sugar.
