What it is
Belochka — «Little Squirrel» in Russian — is one of the most beloved sweets of the Soviet era, still produced by the Babaevsky confectionery concern in Moscow. Each sweet is a dense praline blended from ground cashews, roasted hazelnuts and cocoa mass, enrobed in dark chocolate glaze. The texture is compact and richly nutty, with a clean cocoa finish.
