What it is
Ryabushka — meaning “little speckled hen” — is Germes’ chicken-based take on Doktorskaya, the iconic boiled sausage that became a staple of Soviet deli counters and has remained popular across Eastern Europe ever since. Where traditional Doktorskaya uses pork and beef, Ryabushka is made primarily from chicken, giving it a lighter texture and lower fat content while retaining the signature mild seasoning: nutmeg and white pepper. Germes is a Latvian producer with a long track record in cooked and smoked meats.
