What it is

The Kyiv Cake was created in 1956 at the Karl Marx confectionery factory in Kyiv — today's Roshen Kyiv plant — and its first batches were made with roasted cashew kernels. In later mainstream production cashews were replaced by hazelnuts, but this version is the original formulation, with whole crisp meringue layers studded with chopped roasted cashews.

Between the meringues, a generous layer of butter cream made on sweetened condensed milk with cocoa and a measured pour of brandy. The top is decorated with the cake's signature chocolate piping rosettes and a pastel "chestnut leaf"; the sides are crusted with more chopped cashews. Sold frozen — defrost in the fridge for 4–6 hours before serving with strong coffee or black tea.
