What it is
Kvashenaya kapusta is white cabbage slowly fermented with salt — no vinegar, no heat treatment. Natural lactic-acid fermentation gives it a clean, mildly sour taste and preserves the crunch. Pogrebok's version adds carrot for a touch of sweetness and colour. Ready to eat straight from the jar: as a side, in borscht or shchi, or stirred through warm potatoes.
