Brīvais Vilnis has run its Riga cannery since 1949, and this “Tsarsky” (Царскій) pâté is one of its oldest recipes: Baltic sprats worked with pearl barley and onion into a smooth, savoury spread, tinned under the same ornate gold-and-green lid the brand has used for decades. Spread it thick on dark rye or a cracker, or stir a spoonful through mashed potato or a hot sauce for a quick hit of umami.
