What it is
Ushki — literally “little ears” — are classic Eastern European puff pastry cookies, rolled and folded so the layers puff and shatter on the first bite. Each piece is lightly coated in cinnamon sugar, giving a golden caramelised crust and a warm, spiced sweetness that carries through every flaky layer.
