What it is
"Ushki" — meaning little ears — are a beloved Eastern European puff pastry biscuit, shaped by folding and rolling the dough so each piece fans out into a delicate ear shape. Sprinkled with poppy seeds before baking, they bake to a golden, shattering crispness with a lightly sweetened, layered interior. A classic teatime bite across Russia, Ukraine, and the Baltic states, ushki are just as at home alongside a cup of tea as they are straight from the packet.
