What they are
Selga is one of those small everyday biscuits that almost every Baltic kitchen keeps in a tin. Round, crisp, lightly sweet, with a thin shell and a gentle break. This version adds a soft banana note to the classic recipe — more of a memory than a punch.
Good with strong tea or coffee, on a plate next to fresh curd cheese with jam, or layered with cream and condensed milk to build the no-bake "Selga cake" that has rescued more than one family birthday.
