What it is
A dry-cured sausage made almost entirely from coarsely chopped beef silverside — 1.9 kg of fresh meat goes into every 1 kg of finished sausage. Biovela presses the casings flat and thin so the loaf dries evenly all the way through, leaving a firm slice with a clean, lean bite and a deep beef aroma.
The flat profile is also what makes it easy to cut paper-thin without crumbling. Serve it on a wooden board with rye bread, sharp cheese and a glass of dark beer, or layer it into a sandwich where you want real meat flavour rather than soft deli ham.
