What it is
Black barberry ( Berberis vulgaris ) is a tart dried berry prized across Caucasian, Persian and Central Asian kitchens for centuries. Its sharp fruity acidity brightens rich meat dishes and gives pilaf its signature flavour note. These dried berries are naturally dried to preserve the vivid, sour taste of fresh barberry — no additives, no preservatives.
Add a small handful to rice pilaf during the final stage of cooking. Scatter over slow-braised lamb or game. Use to sharpen the flavour of soups, stews and tomato-based sauces. The berries can also be steeped in hot water for a tart, vitamin-rich herbal tea.
