What it is
Žemaitijos semi-fat curd (varškė) is fresh pressed cottage cheese with a soft, pearl-like crumb and a clean, gently sour finish — the everyday cornerstone of Baltic kitchens.
Eat it as it is with a spoonful of honey or jam, fold it into syrniki and vareniki, or use it in baking. Žemaitijos Pienas has been making it in Telšiai since 1924.
