What it is
Matje herring (from the Dutch maatjesharing ) is made from young Atlantic herring harvested before the fish has fully matured. The result is a fillet with an unusually tender texture and a milder, more delicate flavour than traditional salt-cured herring. Avis-D, a Latvian fish processor, packs these fillets in refined rapeseed oil, which preserves the natural moisture and brings out a clean, subtle sea flavour.
