What it is
Imam Bayildi is one of the great dishes of the Ottoman-Caucasian kitchen — aubergines braised until tender in oil with tomatoes, onions and garlic. Arteni's version, made at Artashat Cannery in Armenia, follows that tradition closely: the vegetables are cooked down with allspice and parsley until the flavours meld into something deep and savoury. Serve warm or at room temperature as a cold appetiser, alongside grilled meats, or spread thickly on rye bread.
