What it is
A whole pork tenderloin, dry-cured with salt and spices then cold-smoked over alder wood at low temperature. The gentle, prolonged smoke preserves the loin's firm texture while building a deep, savoury aroma. Slices cleanly — ideal on rye bread alongside pickles and mustard, or as the centrepiece of a charcuterie board.
