What it is
The flagship Delikatese pate from Riga’s Ädäžu desa works, one of the best-known Baltic liver pates in its class. The recipe leans hard on beef liver (about 71%), rounded out with a touch of pork and a little vegetable fat, gently cooked and worked into a velvety, easy-spreading paste. The flavour is properly liver-forward, lightly sweet, with soft spice and none of the metallic edge or cheap aftertaste you sometimes meet in tinned pates. Pop the tin, mash with a fork, spread thickly on fresh rye, top with a slice of pickle or a pinch of fried onion. Breakfast, lunchbox, late-night snack — sorted.

Beef liver 71%, pork, drinking water, margarine (refined and deodorised vegetable oils, including modified; emulsifiers: polyoxyethylene sorbitan monooleate, mono- and diglycerides of fatty acids, lecithins (SOY lecithin); acidity regulator: citric acid), salt, spices.
