What it is

Iris is the milk toffee that generations of Russians grew up with. It is made by cooking sugar with whole sweetened condensed milk. This crystallised (tirazhenny) kind is softer and slightly grainy, so it melts on the tongue rather than sticking to the teeth. Yashkino makes it to the classic recipe, with condensed milk made to the Russian GOST standard, and folds in pieces of roasted, crushed peanuts.

The bite-sized pieces are easy to share. Keep a few in your bag or desk drawer, or put out a bowl with tea and coffee. The peanuts add a gentle saltiness and crunch that balance the creamy sweetness of the toffee.

Sugar, sweetened condensed whole milk (whole milk, skimmed milk, sugar, lactose), roasted crushed peanuts, molasses syrup, vegetable oils (palm, sunflower, soya), drinking water, humectant (sorbitol syrup), emulsifiers (mono- and diglycerides of fatty acids, soya lecithin), salt, preservative (potassium sorbate), acidity regulator (citric acid), flavourings, colour (beta-carotene), antioxidants (ascorbic acid, alpha-tocopherol).
