What it is
Tirazhny iris — the Russian term for crystallised toffee — is a distinct confectionery tradition: a dense, slightly crumbly fudge-style candy made by cooling a cooked sugar-and-condensed-milk mass until fine sugar crystals form throughout. The result is firmer and less sticky than soft toffee, with a satisfying snap before it melts on the tongue.
Yashkino's chocolate-flavour version adds cocoa powder to the classic recipe, deepening the caramel base with a mild bittersweet note. Made by KDV Group, one of Russia's largest confectionery producers.
