What it is
Appetitka is YAN’s tomato-forward vegetable caviar — closer to a chunky salsa or adjika-style spread than to the squash or eggplant ikra that often shares the shelf with it. Ripe tomatoes make up 90% of the recipe; hot pepper adds a gentle kick, parsley lifts the freshness, and a touch of sunflower oil rounds it out.
