What it is
Vigesta's blood sausage is a staple of the Lithuanian cold-cuts counter — a hearty, iron-rich product made from pork blood and barley groats, seasoned with marjoram, pepper and allspice. Vigesta, based in Mažeikiai, has been producing this style of sausage for decades following the classic Lithuanian recipe.
Best served pan-fried or briefly grilled until the skin crisps. Traditionally paired with lingonberry jam, sauerkraut or roasted potatoes — a dish equally at home on a winter weeknight table as at a seasonal feast.
