What it is
Borodinsky is the best-known dark rye bread of the Russian-speaking world. It is made mostly from wholemeal rye flour with a little wheat flour, fermented rye malt and a little treacle. These give it its deep brown crumb and a gentle sweet-and-sour taste. The crust is traditionally scattered with crushed coriander seed, which gives the loaf its unmistakable aroma.
The crumb is dense and moist, and the loaf keeps well. Slice it thinly and serve it with salted herring or sprats, salo, butter and garlic, or alongside a bowl of borscht or solyanka. It also toasts well and works as a base for open sandwiches with cured fish or smoked meats.
