What it is
Svalia Brinza — the Lithuanian brined-style white cheese, salty and firm, in the feta family but milder. Crumbles cleanly into salads, slices for sandwiches, and works as the filling in cheese pastries (vatrushki, banitsa).
Crumble over Greek-style summer salads, fold into spinach pies, melt onto pita, or eat with watermelon and black olives.
