What it is

The "Prague" cake (Празький / Пражский) was created in the 1970s at the Praga Hotel restaurant in Moscow by pastry chef Vladimir Guralnik and has been a staple of every post-Soviet bakery counter ever since. Tarta's version stacks soft cocoa-sponge layers soaked in aromatic syrup, fills them with a chocolate buttercream made on sweetened condensed milk, adds a fine line of fruit jam, and finishes the top with a glossy chocolate glaze in the classic crosshatch "mesh" pattern.

The whole cake comes pre-sliced into equal portions under the glaze, so you just lift them out — no knife needed. Serve cold or just-cool from the fridge with strong coffee, black tea, or a small glass of cherry liqueur.

Sugar, butter (milk), eggs, wheat flour, sweetened condensed milk, fruit jam (apple/apricot purée, sugar), fat-reduced cocoa powder, cocoa mass, water, emulsifiers (may include soya lecithin), natural flavourings, baking soda, citric acid.
