What it is
Щавельник is a traditional sorrel-based soup deeply rooted in Eastern European cuisine. Its defining character is the bright, lemon-sharp acidity of щавель (sorrel), which cuts through the richness of smoked bacon and gives the broth its vivid green colour.
This canned version by Rivona is a concentrate: dilute the full contents with water at a 1:2 ratio, bring to a simmer for 3–4 minutes, and serve. Ladle into bowls and top with a spoonful of sour cream and a halved soft-boiled egg for a complete, warming meal.
