What it is
White cabbage and carrot, salted and left to ferment slowly at low temperature — the way sauerkraut has always been made on Latvian farms. No vinegar, no pasteurisation, so the natural lactic cultures are still working away in the jar.
Eat it straight from the fridge with a few drops of unrefined oil and a sprinkle of dill, alongside potatoes, dark rye and salted herring. It also lifts a heavy stew or a grilled sausage — the gentle acidity does the work that wine would do in another kitchen.
