What it is
Adzhika is one of the great condiments of the Caucasus, and this «Ognennaya» (Fiery) version is built for those who mean it. Deep-red and intensely flavoured, it starts with sun-ripened hot chilli peppers and ripe tomatoes, then adds pungent garlic, onion and the region’s hallmark spices — coriander and aromatic herbs. The heat is immediate and honest: no artificial sharpness, no tame aftertaste.
Spread on rye or black bread, serve alongside grilled meats and smoked sausages, stir into borscht or bean soup for warmth and depth, or whisk into marinades and salad dressings. A small spoonful transforms a dish; a generous one defines it.
