What it is

Salmon belly is the fattiest, most flavourful strip of the fish — naturally marbled with omega-3-rich oils that keep the flesh moist through the smoking process. Here it is shaped into the traditional braided form, then hot-smoked over hardwood until fully cooked and deeply aromatic.
