What it is

Salmon bellies — known in Russian as tesha — are the fatty underbelly strips of Atlantic salmon. This cut carries the highest concentration of natural oils in the fish, giving each slice a rich, buttery texture that sets it apart from leaner fillets.

Cold smoking at temperatures below 25 °C preserves the delicate fat structure and gives the fish a mild smoky note without cooking the flesh. The result is a silky, almost translucent product that slices cleanly and melts on the tongue.
