What it is
This is a whole piece of pork belly — the cut prized across Eastern Europe for its alternating ribbons of lean meat and creamy fat. After a light cure with salt and spices it is slow-cooked and gently smoked over hardwood, which gives it a burnished, mahogany-coloured crust and a deep, savoury aroma. The fat turns silky, the meat stays moist, and the layers hold together when sliced.
Serve it the way it has been eaten for generations: cold from the fridge, sliced thin, on dark rye bread with mustard, pickles or a sharp horseradish. It is also wonderful warmed through in a skillet, cubed into hearty soups and braised cabbage, or chopped into a country-style scramble. About 500 g per piece — enough for several family snacks or one generous platter.
