What it is
Made at the Rezekne Meat Factory in Latvia's Latgale region, this dry-cured, cold-smoked sausage is built around seasoned pork and beef. The meat is slowly fermented, then cold-smoked to develop the dense texture and concentrated flavour that define this style of Eastern European cured meat.
Wild lingonberries — native to the Northern European forests — are worked into the mixture, providing a fruity counterpoint that cuts through the fat and lifts the spicing without softening it. The result is a firmly sliceable sausage with a clean, lingering finish.
