What it is
Piena is the Latvian word for milk — and this cooked sausage from RGK lives up to its name: pale in colour, soft in texture, gently spiced. Produced at the Rēzekne Meat Factory in eastern Latvia, it follows the Eastern European tradition of boiled sausages: smooth, lightly seasoned and deeply satisfying.
Eat it sliced cold with rye bread, or heat it through in boiling water for 5–7 minutes. It also fries well — a quick turn in the pan gives it a golden skin and a firmer bite.
