What it is
Lapsha Domashniaya — literally “homestyle noodles” — is a classic of Eastern European everyday cooking. Made with wheat flour and two eggs per batch, these dried noodles have a richer flavour and a slightly firmer bite than plain pasta. The two-egg recipe gives them a warm golden hue and a satisfying texture that holds its shape in soup, holds sauce well from a pan, and stands up to a long simmer in broth.
Drop them into a clear chicken or beef broth and you have one of the most comforting meals in the Eastern European repertoire. They cook from dry in 7–10 minutes in boiling salted water.
