What it is
Parvarda is one of the oldest sweets of Central Asia — small, pillow-shaped caramel drops made by boiling sugar syrup with citric acid and repeatedly working the mass until it develops a soft, airy texture. The name itself is Persian for “nurtured”, and the confection has been sold at Uzbek bazaars for centuries.
This fruit-flavoured version adds vivid fruit aromas and colour to the classic recipe. The texture is tender and slightly giving — not sticky, not glass-hard — with a pleasant sweet-sour finish.
