About this product

Salt-cured rather than vinegar-pickled, these oyster mushrooms take on the deep, savoury character of properly fermented Russian forest mushrooms — without the sharpness of a vinegar jar. The garlic comes through clearly, the dill stays bright, and the texture remains pleasingly silky.

Drain, dress with a generous slick of cold-pressed sunflower oil, finely sliced onion, and a little extra fresh dill if you have it. Serve with hot boiled potatoes, dark rye, sour cream, and something cold to drink — this is what a Russian appetiser plate is supposed to taste like.
