What it is
Beshbarmak — meaning “five fingers” in Kazakh — is the festive centrepiece of Kazakh and Kyrgyz cuisine: slow-braised meat and soft noodle sheets served in a rich broth. These ready-to-cook sheets are cut to the traditional 4.5 × 6.5 cm rectangle and made from egg pasta, giving them the characteristic silky texture once boiled.
Simply simmer the sheets in seasoned meat broth for 8–10 minutes until just tender, layer with braised lamb or beef, and ladle over fragrant onion broth. Equally at home in a hearty weekday soup or at a celebration table.
