What it is
Kabachkovaya ikra — squash caviar — is one of the defining comfort spreads of Eastern European cooking. Nezhin, a brand built on Ukrainian preserved vegetables, makes this version to a time-honoured recipe: courgettes slow-cooked with fried onions, carrots, tomato paste and sunflower oil until the mixture collapses into a smooth, gently savoury paste. Spread it thickly on dark rye bread or use as a base for open sandwiches.
