About this product
Wild chanterelles (Cantharellus cibarius) are the most prized of European forest mushrooms — golden, fragrant, firm, with a fruity apricot note and a faint peppery lift. Marinated whole in a clean brine, they keep all their colour and bite, which is why a jar of these is the centrepiece of a serious zakuska board.
Drain, fan onto a plate, finish with a thread of sunflower oil and a single ring of red onion, and let them speak for themselves. They also fold beautifully into Olivier or vinaigrette salads added at the last moment, and turn an ordinary buckwheat into something more.
