What it is
Paradise apples — the tiny, jewel-like crabapples of the Caucasus — are one of the most prized preserves in Georgian cuisine. Mimino simmers them whole in a pure sugar syrup until each apple turns translucent and amber, the stems intact, the flesh yielding and fragrant. The result is a preserve as beautiful in the jar as it is on the table. Spread onto fresh bread or serve alongside hard cheese and walnuts — the Georgian way.
