What it is
Pryaniki are the classic Eastern European soft gingerbread: pillowy wheat cookies baked with warm spices and leavened with ammonium bicarbonate for their characteristic light crumb, then finished with a thin sugar glaze. The milk variety replaces sharp aromatic notes with a gentle, cream-tinged sweetness — just as good with black tea as with coffee.
