What it is
Kauno Kumpis is a Kaunas-style cold-smoked pork ham — a Lithuanian deli classic produced by Vigesta, the long-established meat house based near Kaunas. Whole pork ham is dry-salted, matured, and then smoked at low temperature over hardwood for many hours. The cold-smoke method is slower and gentler than hot-smoking: it dries the meat rather than cooking it, leaving the muscle firm and dense with a deep amber crust and concentrated, savoury flavour.
Sliced thin, the ham shows a rich rosy-red interior shading darker towards the edge, with neat veins of natural fat. It is the centrepiece of any Lithuanian zakuski platter — serve it with dark rye, salted butter, fresh horseradish, pickled cucumber, mustard, or a wedge of sharp cheese. It is also superb on an open sandwich for breakfast, diced into a hearty bean or potato soup, or laid over a warm baked potato.
