What it is

Mazeikiu Mesine Medziotoju – literally Hunter's sausages – are one of Lithuania's most recognisable snack sausages, a fixture in the deli case and the market stall from Vilnius to Klaipeda. They are slim, finger-thick rods of coarsely ground pork and beef, seasoned with garlic, black pepper, allspice and a quiet whisper of juniper berry, then hot-smoked over hardwood until the casing turns a deep mahogany and the inside firms up into something you can slice, snap or simply tear apart with your hands.

They come ready to eat. The traditional Lithuanian move is to peel one open, slice it on the bias, and pile the rounds onto dark rye with a smear of mustard, a slick of cold beer next to it and a pickled cucumber on the side. They are equally at home on a hunter's flask trip, sliced into a pot of bean soup, charred on a campfire grill, or simply broken into a board of cheese and rye crackers.
