What it is
Matje herring is the classic Northern European preparation — young Atlantic herring, lightly salted and preserved in rapeseed oil without any smoking or cooking. The result is a soft, mild fillet with a delicate texture that holds its shape well and carries just enough salt to bring out the natural richness of the fish.
These fillets from IRBE, a Latvian fishing company based in Roja harbour on the Gulf of Riga, come in a generous 450 g tray with whole fillet pieces ready to serve: on rye bread, alongside boiled potatoes, or as part of a cold seafood spread.
