What it is
Zefir — the traditional Russian-Latvian meringue confection: whipped apple purée with sugar and egg white, set into a tender, foam-light cylinder. Snow-white or pastel pink, gently sweet, melts on the tongue.
Serve with hot tea, cocoa or coffee. A small piece is enough; the air does the work.
